Whole wheat pasta is available in health food stores across the country and in the natural foods sections of many supermarkets.
Time to prepare: 15 minutes
| 1 cup whole wheat shell pasta or other small shape
Boiling salted water
1/2 cup finely chopped parsley
1/4 cup minced fresh mint
1/4 cup chopped green onions
1 large tomato, peeled, seeded and diced
1/4 cup diced green pepper
1/4 cup EACH lemon juice and olive oil
1 tsp. salt or to taste
1/4 to 1/2 tsp black pepper
Lettuce leaves, tomato wedges, or lemon and lime slices, optional
| Cook pasta in boiling salted water (use 1 Tbsp salt for 1 quart water) about 5 to 8 min or until
pasta is al dente. Drain and rinse under cold water. Drain thoroughly.
Turn pasta into large bowl Stir in parsley, mint green onions, tomato
In separate bowl, mix lemon juice oil. salt and black pepper Pour over pasta mixture, mixing well. Cover and chill.
To serve, garnish with lettuce leaves and tomato wedges or lemon and lime slices, if desired.
|Tips: This salad can be prepared
several days in advance, covered and refrigerated The flavor improves upon standing.
Good served with: Sliced cold meats or barbecued chicken or meat.
