Turkey, Lettuce & Mushroom Salad

The inevitable question of what to do with leftover turkey is appropriately answered by this delicately seasoned turkey salad.

2 cups diced turkey
1 small head Romaine lettuce, torn
8 to 10 mushrooms, sliced
1 red or green pepper, sliced
3 stalks celery, thinly sliced
4 green onions, thinly sliced
Alfalfa sprouts for garnish


3/4 cup salad oil
1/4 cup lemon juice or cider vinegar
3/4 tsp salt
1/2 clove garlic, minced
Dash paprika or black pepper


Combine turkey, lettuce, mushrooms, pepper, celery and onions. Set aside.

Combine all dressing ingredients in a bottle. Coverwith lid and shake
until well blended.

Toss salad gently with enough dressing to coat ingredients.

Transfer to salad bowl. Garnish with alfalfa sprouts. Serve with additional dressing on the side.


If you do not have any turkey on hand. buy packaged turkey slices and cut into thin strips.
