Tuna Burgers

1 can (9 3/4 oz.) tuna, drained
1/2 cup cracker crumbs
2 eggs, slightly beaten
1 Tbs. finely chopped green onion
1 tsp. lemon juice
1/2 tsp. salt
1/4 tsp. lemon pepper
1/4 tsp. chili powder
Dash hot sauce
Lettuce leavevs
4 hamburger buns, split and toasted
2 tomatoes, sliced


Heat oven to 350. Mix all ingredients except lettuce, buns and tomatoes. Press evenly in greased loaf pan, 8 1/2 x 4 1/2 x 2 1/2 inches. Bake until firm and juicy, about 30 minutes. Cool in pan about 2 minutes, then remove from pan. Cut loaf into fourths; split each fourth horizontally in half. Place lettuce on each bun half; top with tuna and a tomato slice.

2 open-face burgers per serving
