Tabooley is a very refreshing salad that is nutritious, too. It is very quick, easy to prepare and improves on standing.

Ingredients |
1/2 cup finely crushed bulgur wheat 2 cups water 1 tomato, finely chopped 1/2 cup finely chopped parsley 1/4 cup EACH chopped onion and green pepper 3 radishes, sliced 1/2 cucumber, peeled and chopped 3/4 tsp. salt 1/4 cup fresh lemon juice 1/4 cup salad oil 2 Tbsp. finely chopped mint leaves |
Directions |
Place bulgur wheat in a small bowl. Cover with water. Let stand at least 40 min. Drain thoroughly.
Combine remaining ingredients and bulgur wheat ina medium bowl. Cover and chill. Garnish with mint leaves, if desired, when serving. |

Tip: Any fresh tasting vegetable, such as leek or green onions may be added. |
