Nice easy week-night dinner
Ingredients |
1/2 cup soy sauce 1/4 cup light brown sugar 1 clove garlic, thickly sliced 1 1/2 lbs top round London broil, about 1 1/2 inches thick 1 1/2 cups white rice 1/2 tsp frshly ground black papper 8 scallions, end trimmed 1 tbsp sesame seeds (optional) |
Directions |
In a large skillet, stir together soy sauce, sugar, and garlic until sugar dissolves. Rinse meat, pat dry and place in skillet, turning to coat. Let stand 20 minutes, turning once more. Cook rice according to package directions. Adjust oven rack to upper third of oven and turn on broiler. Place meat in rimmed baking sheet lined with foil. Reserve marinade in skillet. Sprinkle meat with pepper and broil, 5 minutes per side for medium-rare. Transfer to cutting board and let sit 5 minutes before slicing. Place skillet containing marinade over medium-high heat and bring to boil. Add the scallions, reduce heat to medium and cook 2 minutes. Divide rice among 4 plates, arrange meat on top, spoon scallions and sauce over it, and sprinkle with sesame seeds, if desired. |
Notes |
Boiling the leftover marinad before using it as a sauce is necessary to kill any bacteria from the meat |
