Savory Potato Bake

A full-bodied potato casserole makes th eperfect partner for just about any dish, whether it be beef, poultry or fish. This one is fortified with cream cheese and eggs, ham to give it a slight smoky flavor and spced with exotic cumin, turmeric and cayenne.

Ingredients

4 cups grated potatoes (4 to 5 medium)
2 pkgs. (3 oz. each) cream cheese
2 eggs, separated
1 1/4 cups milk
3/4 tsp. salt
1/4 tsp. each cumin and cayenne
1/2 tsp. turmeric
1/2 cup minced ham, optional
3 Tbs. chopped onion
2 Tbs. minced parsley
Paprika
2 Tbs. butter or margarine

Directions

Grate potates and cover with cold water while preparing remaining ingredients.

Beat cream cheese until smooth. Add egg yolks, blending well. Stir in milk, salt and spices until well mixed. Add ham, onion and parsley.

Notes

Good served with fried chicken, coleslaw and orange sherbet
