Pineapple Salad

Pineapple Salad

This unusual salad combines pineapple with sauerkraut, Canadian bacon and apple.

Ingredients

1/2 large pineapple
1 can (8 oz) sauerkraut, drained
1 red apple, cored and diced
1 1/2 cups Canadian bacon, cut into 1-inch strips

Dressing:

3 Tbsp. mayonnaise
2 Tbsp. sour cream or whipping cream
2 Tbsp. lemon juice
1 Tbsp. chopped fresh dill or 1 tsp. dried dill weed
1/2 tsp. each salt and sugar
1/4 tsp dried rosemary
Romaine, green leaf or butter
lettuce leaves

Directions

Remove pineapple from shell. Core and cut fruit into chunks.
B In a large bowl. combine pineapple. sauerkraut, apple and
Canadian bacon Toss to mix. Cover and chill 30 mm. or longer.

Meanwhile, in separate bowl stir together all the dressing ingredients.
Cover and chill.

When ready to serve, line serving bowl or individual serving plates with lettuce leaves. Spoon chilled salad over the lettuce. Pour dressing over top.

Notes

If desired, you can substitute
1 can(1 Ib 4oz.(drained pineapple
chunks for the fresh pineapple and
cooked ham forthe Canadian bacon.
