4 cups canned tomato juice 1 cup water 3 celery stalks, thinly sliced 1 carrot, peeled and grated 1/2 cup chopped onions 2 to 4 Tbsp lemon juice 1 clove garlic, minced 1/2 tsp. dried basil leaves Salt and black pepper Hot pepper sauce 1/2 cup chopped Chinese cabbage for garnish Lemon slices |
Directions |
In a saucepan, combine tomato juice, water, celery, carrot, onions, lemon juice, garlic, basil, salt, black pepper and hot pepper sauce. Bring to boil over high heat. Reduce heat and simmerfor 30 min. Correct seasoning. Pour into soup bowls. Garnish with the chopped cabbage and lemon slices. |

Other herbs, such as dill, tarragon or chervil, can be substituted for the basil. |
