Herb and Caper Mayonnaise

Herb and Caper Mayonnaise

This is a derivative of the classic tartar sauce but it has a lot of capers and herbs so it is less rich and has a brighter, tangier flavor

2 tbsp capers, drained and chopped
8 gherkins, chopped
2 tbsp chopped fresh chives
2 tbsp chopped fresh tarragon (rub leaves with olive oil, then chop at the last minute or they turn black)
2 tbsp chopped fresh parsley
1 cup mayonnaise s
alt to taste


Combine capers, gherkins, chives, tarragon, parsley and mayonnaise. Season to taste with salt
